2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

1 teaspoon smoked paprika

1 teaspoon garlic powder

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups milk (whole or 2%)

8 ounces sharp cheddar cheese, shredded

4 ounces cream cheese, diced

1 cup pickled jalapeños, chopped (adjust to taste)

½ cup breadcrumbs (optional, for topping)

Fresh cilantro, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken, season with smoked paprika, garlic powder, salt, and pepper. Cook for about 5-7 minutes, or until the chicken is fully cooked and browned. Remove the chicken from the skillet and set aside.
