Chicken, Mushroom, and Spinach Lasagna

9-12 lasagna noodles (oven-ready or regular)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 pound boneless, skinless chicken breast, diced

8 ounces mushrooms, sliced (cremini or button)

5 cups fresh spinach

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

1 jar (24 ounces) marinara sauce

15 ounces ricotta cheese

1 cup grated Parmesan cheese, divided

4 cups shredded mozzarella cheese, divided

1 egg

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Noodles: If using regular lasagna noodles, cook them according to package instructions until al dente. If using oven-ready noodles, you can skip this step.

      Prepare the Chicken Filling:

        - In a large skillet, heat the olive oil over medium heat.

          - Add the chopped onion and sauté until translucent, about 5 minutes.

            - Stir in the minced garlic and cook for another 1 minute until fragrant.

              - Add the diced chicken to the skillet and cook until browned and cooked through (about 7-8 minutes).

                - Incorporate the sliced mushrooms and cook for an additional 5 minutes until they start to soften.

                  - Add the fresh spinach, basil, oregano, salt, and pepper, cooking until the spinach wilts (about 2-3 minutes).

                    - Remove from heat and let cool slightly before assembling.

                      Prepare the Cheese Mixture:

                        - In a medium bowl, combine ricotta cheese, half of the grated Parmesan cheese, mozzarella cheese (1 cup), and the egg. Mix until smooth and season with a pinch of salt and pepper.

                          Assemble the Lasagna:

                            - Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.

                              - Place a layer of lasagna noodles on top.

                                - Spread half of the chicken and mushroom filling over the noodles.

                                  - Add one-third of the ricotta cheese mixture over the filling.

                                    - Add a layer of marinara sauce, followed by another layer of noodles.

                                      - Repeat the process: remaining chicken filling, another third of the ricotta mixture, more marinara sauce, and another layer of noodles.

                                        - Finish with the last layer of noodles, the remaining marinara sauce, and top with the remaining mozzarella and Parmesan cheese.

                                          Bake the Lasagna:

                                            - Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

                                              - Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

                                                Let it Rest: Once baked, remove from the oven and let the lasagna rest for 10-15 minutes before slicing. This helps with the layers holding together.

                                                  Serve: Garnish with fresh basil leaves if desired. Serve warm and enjoy!
