4 large russet potatoes

1 cup frozen mixed vegetables (peas, corn, bell peppers)

1 can (15 oz) kidney beans, drained and rinsed

1 cup shredded sharp cheddar cheese

1 cup chili sauce (store-bought or homemade)

1 teaspoon chili powder

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon cumin

Olive oil (for drizzling)

Fresh cilantro or green onions (for garnish)

Salt and pepper (to taste)

Instructions
 

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

    Prepare the Potatoes: Wash the russet potatoes thoroughly and cut them into thin fries. To achieve a crispy texture, you can soak the cut potatoes in water for 30 minutes, then drain and pat them dry with a towel.

      Season the Fries: In a large bowl, toss the potato fries with olive oil, salt, pepper, garlic powder, onion powder, and a pinch of cumin for added flavor. Spread them evenly on a baking sheet lined with parchment paper.

        Bake the Fries: Bake the fries in the preheated oven for about 25-30 minutes, flipping them halfway through, until they are golden brown and crispy.

          Prepare the Chili Mixture: While the fries are baking, heat a saucepan over medium heat. Add the kidney beans, frozen mixed vegetables, chili sauce, chili powder, and a pinch of salt and pepper. Stir well and let it simmer for about 10 minutes until heated through.

            Layer the Chili and Cheese: Once the fries are done baking, remove them from the oven and immediately spoon the chili mixture over the fries. Make sure to cover them well.
