4 ears of fresh corn, husked

1/4 cup unsalted butter, softened

2 tablespoons lime juice (freshly squeezed)

1 teaspoon chili powder

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/4 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1/4 cup Cotija cheese, crumbled (optional)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Grill: Heat your grill to medium-high heat (about 400°F/200°C).

    Make the Chili Lime Butter: In a small bowl, combine the softened butter, lime juice, chili powder, smoked paprika, garlic powder, salt, and black pepper. Mix well until fully incorporated.

      Prep the Corn: Once the grill is ready, use a brush or your hands to slather the chili lime butter generously over each ear of corn, making sure to cover all sides.

        Grill the Corn: Place the corn directly on the grill grates at a diagonal angle, allowing them to cook evenly. Grill for about 10-15 minutes, turning occasionally, until the kernels are slightly charred and tender.

          Add Cheese (Optional): If using Cotija cheese, sprinkle it over the corn in the last couple of minutes of grilling, allowing it to melt slightly.

            Serve: Once done, remove the corn from the grill. Garnish with chopped fresh cilantro and serve with lime wedges on the side for an extra burst of flavor.
