Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon chili powder

1/2 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust for spice level)

Salt, to taste

Freshly ground black pepper, to taste

Zest of 1 lime

Fresh cilantro, chopped (optional, for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Chickpeas: Drain and rinse the chickpeas under cold water. Pat them dry with a clean kitchen towel. Removing excess moisture helps them get crispy in the oven.

Season the Chickpeas: In a mixing bowl, combine the chickpeas, olive oil, chili powder, cumin, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper. Mix well until all the chickpeas are evenly coated in the spices.

Spread and Roast: Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Make sure they are not crowded to ensure even roasting.

Roasting Time: Roast in the preheated oven for about 25-30 minutes, stirring halfway through. Keep an eye on them during the last 5-10 minutes to avoid burning. They should look golden brown and crispy when they're done.

Add Lime Zest: Once roasted, remove the chickpeas from the oven and sprinkle the lime zest over them for a fresh kick. Toss again to combine.

Serve: Allow them to cool slightly before serving. You can sprinkle with additional salt or garnish with chopped cilantro if using. Enjoy them as a snack, salad topper, or as a crunchy side dish!
