1 cup pumpkin puree (canned or fresh)

1/2 cup vegetable oil or melted coconut oil

1/2 cup brown sugar, packed

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon ground cloves

1/2 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or chocolate chips (optional)

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a 9x5 inch loaf pan by greasing it with cooking spray or lining it with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, vegetable oil, brown sugar, and granulated sugar. Whisk until the mixture is smooth and well combined.

      Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully incorporated.

        Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
