Ingredients

8 oz (about 2 cups) penne pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups heavy cream

1 cup grated Parmesan cheese, plus extra for topping

1 cup shredded mozzarella cheese

1 cup broccoli florets (optional)

1 tablespoon chopped fresh parsley (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta until al dente, according to package instructions. Drain and set aside.

Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with Italian seasoning, salt, and pepper. Sauté until the chicken is cooked through, about 5-7 minutes. Stir in the minced garlic and cook for another minute, until fragrant.

Make the Alfredo Sauce: Reduce the heat to low and add the heavy cream to the skillet. Slowly stir in the Parmesan cheese, allowing it to melt into the cream, creating a smooth sauce. If using broccoli, add it now and cook for another 2-3 minutes until just tender.

Combine Pasta and Sauce: In a large mixing bowl, combine the cooked pasta and the chicken Alfredo mixture. Stir until the pasta is fully coated with the sauce.

Assemble the Bake: Transfer the pasta mixture into a greased 9x13-inch baking dish. Sprinkle the top evenly with mozzarella cheese and extra Parmesan cheese for a golden finish.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and lightly golden on top.

Garnish and Serve: Once baked, remove from the oven and let it sit for about 5 minutes. Garnish with chopped fresh parsley before serving.
