Classic Chicken & Sweet Potato Stew

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 large sweet potatoes, peeled and diced into 1-inch cubes

1 medium onion, finely chopped

3 cloves garlic, minced

2 medium carrots, sliced

1 red bell pepper, diced

4 cups (950ml) low-sodium chicken broth

1 can (14.5 oz) diced tomatoes, with juices

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon dried thyme

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

2 tablespoons olive oil

Fresh parsley, for garnish

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken pieces and sear until golden brown, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Cook the Vegetables: In the same pot, add the chopped onion, carrots, and red bell pepper. Sauté for 4-5 minutes, or until the vegetables begin to soften. Add the minced garlic and sauté for another minute until fragrant.

      Combine Ingredients: Return the seared chicken to the pot. Add the diced sweet potatoes, chicken broth, diced tomatoes (with juices), ground cumin, smoked paprika, thyme, salt, and black pepper. Stir well to combine all the ingredients.

        Simmer the Stew: Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 25-30 minutes, or until the sweet potatoes are tender and the chicken is cooked through.

          Adjust Seasoning: Taste the stew and adjust seasoning as needed. If you want a little more flavor, you can add a pinch of cayenne for heat or increase the cumin or paprika.
