Classic Meatloaf with Mashed Potatoes

For the Meatloaf:

1 ½ pounds ground beef (preferably 80% lean)

1 cup breadcrumbs (plain or Italian)

1 small onion, finely chopped

2 cloves garlic, minced

2 large eggs

1 cup milk

3 tablespoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

½ cup ketchup (for glaze on top)

2 tablespoons brown sugar (optional, for sweetness)

For the Mashed Potatoes:

2 pounds russet potatoes, peeled and cubed

½ cup whole milk (or heavy cream for extra creaminess)

4 tablespoons unsalted butter

Salt and pepper to taste

Fresh chives or parsley for garnish (optional)

Instructions
 

Step 1: Preparing the Meatloaf

    Preheat your oven to 350°F (175°C).

      In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, eggs, milk, Worcestershire sauce, thyme, oregano, salt, and pepper. Mix until just combined; do not overmix.

        Form the mixture into a loaf shape and place it in a lightly greased roasting pan.

          In a small bowl, mix together the ketchup and brown sugar. Spread this glaze evenly over the top of the meatloaf.

            Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C).

              Step 2: Making the Mashed Potatoes

                While the meatloaf is baking, place the peeled and cubed potatoes in a large pot and cover them with cold, salted water. Bring to a boil over medium heat.

                  Once boiling, reduce the heat to a simmer and cook the potatoes until fork-tender, about 15-20 minutes. Drain the potatoes.

                    In the same pot, add the butter and milk. Return the drained potatoes to the pot and mash until smooth and creamy. Season with salt and pepper to taste.

                      If desired, garnish with chopped chives or parsley.

                        Step 3: Serving

                          Once the meatloaf is done, remove it from the oven and let it rest for about 10 minutes before slicing.

                            Serve slices of the meatloaf alongside a generous portion of creamy mashed potatoes. Drizzle extra gravy or ketchup on the meatloaf if you like.
