Ingredients

1 lb ground beef (80% lean)

1/2 lb ground pork

1 cup breadcrumbs (preferably Italian style)

1/2 cup milk

1 small onion, finely chopped

1 small green bell pepper, finely chopped

1 cup mushrooms, finely chopped

2 cloves garlic, minced

2 large eggs

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

Salt and pepper to taste

1 cup provolone cheese, shredded

1 teaspoon Italian seasoning

Optional: additional provolone slices for topping

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.

Sauté Vegetables: In a skillet over medium heat, add a drizzle of olive oil. Sauté the chopped onion, green bell pepper, and mushrooms until they are softened, about 5-7 minutes. Add the minced garlic and cook for another minute. Remove from heat and allow to cool slightly.

Combine Ingredients: In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, milk, sautéed vegetables (once cooled), eggs, Worcestershire sauce, Dijon mustard, and Italian seasoning. Season with salt and pepper. Mix well until everything is evenly combined, but avoid overmixing to keep the meatloaf tender.

Shape the Meatloaf: Transfer the meat mixture to the prepared loaf pan and shape it into a loaf. Make a slight indent down the center if you plan to add slices of provolone cheese in the next step.

Add Cheese: If desired, place slices of provolone cheese in the center of the meatloaf mixture and press them in slightly, then cover them with the remaining meat mixture. This step adds a delightful cheesy surprise in every slice!

Bake: Place the meatloaf in the preheated oven and bake for about 60-70 minutes, or until the internal temperature reaches 160°F (70°C).

Optional Topping: If you want to add more cheese on top, place additional provolone slices on the meatloaf during the last 10 minutes of baking.

Rest and Serve: Once baked, remove it from the oven and let the meatloaf rest for about 10 minutes before slicing. This resting time helps retain the juices.

Slice and Enjoy: Serve warm with crusty rolls, alongside a side of mashed potatoes, or enjoy it as a hearty sandwich filling.
