Coffee Caramel Cake

For the Cake:

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsweetened cocoa powder

2 tsp baking powder

1 tsp baking soda

½ tsp salt

1 cup brewed coffee (cooled)

½ cup vegetable oil

2 large eggs

1 tsp vanilla extract

For the Caramel Sauce:

1 cup granulated sugar

6 tbsp unsalted butter, cut into pieces

½ cup heavy cream

1 tsp sea salt (or to taste)

For the Frosting:

½ cup unsalted butter, softened

2 cups powdered sugar

2 tbsp brewed coffee (cooled)

1 tsp vanilla extract

Instructions
 

Prepare the Cake Batter:

    - Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

      - In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

        - In a separate bowl, combine the cooled brewed coffee, vegetable oil, eggs, and vanilla extract. Mix until well combined.

          - Gradually pour the wet ingredients into the dry ingredients, stirring until just combined.

            Bake the Cake:

              - Divide the batter evenly between the prepared cake pans.

                - Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

                  - Remove from the oven and allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

                    Make the Caramel Sauce:

                      - In a medium saucepan over medium heat, combine the granulated sugar and allow it to melt without stirring. Gently swirl the pan to ensure even melting.

                        - Once melted and golden brown, add the butter pieces, whisking quickly until fully melted.

                          - Carefully pour in the heavy cream (it will bubble vigorously). Whisk until the sauce is smooth, then stir in the sea salt. Remove from heat and let it cool slightly.

                            Prepare the Frosting:

                              - In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar and mix until combined.

                                - Pour in the brewed coffee and vanilla extract, beating until the frosting is smooth and fluffy.

                                  Assemble the Cake:

                                    - Once the cakes are completely cooled, place one layer on a serving plate. Drizzle some caramel sauce over the top.

                                      - Spread a layer of frosting over the caramel, then place the second cake on top.

                                        - Frost the top and sides of the cake with the remaining frosting. Drizzle additional caramel sauce over the top, letting it drip down the sides.

                                          Serve:
