Cold Italian Pasta Salad

12 oz. fusilli pasta

1 cup cherry tomatoes, halved

1 cup cucumbers, diced

1 cup bell peppers (red and yellow), chopped

1/2 cup black olives, pitted and sliced

1/2 cup red onion, finely chopped

1 cup mozzarella balls (bocconcini)

1/4 cup fresh basil leaves, torn

1/4 cup fresh parsley, chopped

1/2 cup Italian dressing (store-bought or homemade)

Salt and pepper, to taste

Optional: 1/4 tsp red pepper flakes for a kick

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.

    Prepare the Vegetables: While the pasta is cooling, wash and chop the cherry tomatoes, cucumbers, bell peppers, black olives, and red onion.

      Combine Ingredients: In a large bowl, combine the cooled fusilli pasta, cherry tomatoes, cucumbers, bell peppers, black olives, red onion, mozzarella balls, basil, and parsley.

        Dress the Salad: Pour the Italian dressing over the pasta salad. Gently toss to combine all the ingredients evenly. Make sure the pasta and vegetables are well-coated with the dressing.

          Season: Taste the salad and add salt, pepper, and red pepper flakes (if using) according to your preference. Toss again to distribute the seasoning.
