Ingredients

4 ripe peaches, sliced

1 cup mixed berries (blueberries, raspberries, and strawberries)

1/4 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 cup old-fashioned oats

1/2 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon cinnamon

1/4 cup cold unsalted butter, cubed

A pinch of salt

Vanilla ice cream or whipped cream for serving (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Fruit Filling: In a large mixing bowl, combine the sliced peaches and mixed berries. Add in the granulated sugar, lemon juice, cornstarch, and vanilla extract. Gently toss everything together until the fruits are well-coated. Transfer the mixture to a 9x13 inch baking dish.

Make the Crumble Topping: In a separate bowl, mix the oats, all-purpose flour, brown sugar, cinnamon, and salt. Add the cold cubed butter to the mixture. Using a fork or your fingers, mix the ingredients together until the mixture resembles coarse crumbs. Make sure the butter is evenly distributed throughout the dry ingredients.

Assemble the Dish: Evenly spread the crumble topping over the peach and berry filling in the baking dish.

Bake: Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the topping is golden brown and the fruit mixture is bubbling around the edges.

Serve: Once baked, remove the crumble from the oven and let it cool for a few minutes. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream on top for an extra treat!
