Instructions

Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and line the bottoms with parchment paper for easy removal.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

Combine Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, starting and ending with flour. Mix until just combined.

Bake the Cakes: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

Make Cookie Dough Filling: In a bowl, beat together the butter and brown sugar until creamy. Add the flour and vanilla, and mix until combined. If the dough is too thick, add milk one tablespoon at a time until the desired consistency is reached. Fold in the chocolate chips.

Prepare the Frosting: In another bowl, beat the butter until creamy. Gradually add in the powdered sugar and cocoa powder, mixing well. Pour in the heavy cream and vanilla, beating until fluffy and smooth.

Assemble the Cake: Once the cakes are completely cooled, place one layer on a cake stand. Spread the cookie dough filling on top of the first layer. Place the second layer on top.

Frost the Cake: Use the chocolate frosting to coat the top and sides of the cake. Smooth it out for a clean finish or make swirls for texture.

Decorate: Top with mini chocolate chip cookies and sprinkle extra chocolate chips around the base of the cake for a fun finish.

Serve and Enjoy: Slice into the delicious layered cake and serve it to your friends and family. Watch them be amazed at the gooey cookie dough surprise inside!
