2 cups masa harina (corn flour)

1 cup warm water

1 teaspoon baking powder

1 teaspoon salt

1 cup fresh corn kernels (or canned, drained)

½ cup crumbled queso fresco (optional)

6 large corn husks (soaked in warm water for 30 minutes)

Salsa (for serving, optional)

Instructions
 

Prepare the Masa: In a large mixing bowl, combine the masa harina, baking powder, and salt. Gradually add warm water, mixing with your hands until the dough comes together and is soft but not sticky. If the dough is too dry, add a bit more water.

    Incorporate Corn: Fold in the fresh corn kernels and crumbled queso fresco until evenly distributed throughout the masa.

      Shape the Corundas: Take a soaked corn husk and spread about 2 tablespoons of masa mixture onto the center, shaping it into a rectangle, about 1/2 inch thick. Fold the sides of the husk over the masa, then fold up the bottom to enclose the filling and create a package. Repeat for all husks.

        Steam the Corundas: Set up a steamer basket over a pot of simmering water. Arrange the corundas upright, standing on their folded bottoms. If necessary, secure them with kitchen twine or additional husks. Steam for 45-60 minutes, or until the masa is firm and cooked through.

          Serve: Carefully remove from the steamer and let cool slightly before unwrapping. Serve warm with your favorite salsa.
