Cottage Cheese Hashbrown Casserole

1 (30 oz) bag frozen hashbrowns, thawed

2 cups cottage cheese

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 small onion, finely chopped

1 bell pepper (any color), diced

2 cloves garlic, minced

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon paprika

1 tablespoon olive oil

3 large eggs

½ cup sour cream

Fresh chives or green onions for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C) and grease a 9x13 inch casserole dish with cooking spray or butter.

    Sauté Vegetables: In a skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 5-7 minutes until they are soft and translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant. Remove from heat and let cool slightly.

      Mix the Base: In a large mixing bowl, combine the thawed hashbrowns, cottage cheese, sour cream, half of the cheddar cheese, and half of the mozzarella cheese. Stir in the sautéed onion, bell pepper, and garlic mixture.

        Season the Mixture: Add the salt, black pepper, paprika, and eggs to the mixture. Stir until all ingredients are well incorporated and evenly mixed.

          Transfer to Casserole Dish: Pour the mixture into the prepared casserole dish, spreading it evenly. Top with the remaining cheddar and mozzarella cheeses.

            Bake: Place the casserole in the preheated oven and bake for 45-50 minutes or until the top is golden brown and the casserole is bubbling around the edges.

              Cool & Serve: Once done, remove from the oven and let it cool for about 10-15 minutes. This will help the casserole set up a bit more. Garnish with fresh chives or green onions if desired.
