1 cup cottage cheese

1 cup all-purpose flour

2 large eggs

1/3 cup vegetable oil

1/4 cup milk

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 cup shredded sharp cheddar cheese

1/4 cup chopped fresh parsley (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease or line a muffin tin with paper cups.

    Prepare the Wet Ingredients: In a large mixing bowl, combine the cottage cheese, eggs, vegetable oil, and milk. Mix until well combined, ensuring that the cottage cheese is mostly broken up and incorporated.

      Mix the Dry Ingredients: In another bowl, whisk together the flour, baking powder, salt, black pepper, garlic powder, oregano, and thyme.

        Combine Mixtures: Gradually fold the dry ingredients into the wet ingredients. Stir gently until just combined; be careful not to over-mix.

          Add the Cheese and Herbs: Fold in the shredded cheddar cheese and chopped parsley if using. Make sure the cheese is evenly distributed throughout the batter.

            Fill the Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

              Bake the Muffins: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
