12 oz (340 g) penne pasta

1 lb (450 g) ground beef

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup corn (frozen or fresh)

1 can (15 oz) diced tomatoes with green chilies

1 cup beef broth

1 tbsp Worcestershire sauce

2 tsp chili powder

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

¼ cup chopped fresh parsley (for garnish)

Olive oil, for cooking

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the ground beef and cook until browned, breaking it apart with a wooden spoon (about 5-7 minutes). Drain excess fat if necessary.

      Sauté Vegetables: To the skillet with the beef, add the diced onion, garlic, and bell pepper. Sauté for 3-5 minutes, until the vegetables are softened.

        Mix in Remaining Ingredients: Stir in the corn, diced tomatoes with green chilies, beef broth, and Worcestershire sauce. Season with chili powder, cumin, smoked paprika, salt, and pepper. Bring the mixture to a simmer and allow to cook for about 5 minutes to meld the flavors.
