1 medium butternut squash, peeled and diced (about 4 cups)

1 lb Italian sausage (mild or spicy, depending on your preference)

1 medium onion, diced

3 cloves garlic, minced

4 cups vegetable or chicken broth

1 can (14 oz) diced tomatoes, undrained

1 cup cheese tortellini (fresh or frozen)

2 cups fresh spinach or kale, chopped

1 tsp dried thyme

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

2 tbsp olive oil

Grated Parmesan cheese for serving

Fresh parsley or basil for garnish

Instructions
 

Sauté the Sausage: In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the pot and set aside, leaving the drippings in the pot.

    Cook the Aromatics: In the same pot, add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add the Butternut Squash: Add the diced butternut squash to the pot and stir. Cook for about 5 minutes to let the squash begin to soften.

        Combine the Broth and Tomatoes: Pour in the vegetable or chicken broth and add the can of diced tomatoes (with their juices). Bring the mixture to a boil, then reduce the heat to a simmer.

          Season the Soup: Stir in the dried thyme, oregano, red pepper flakes (if using), and season with salt and pepper. Let the soup simmer for about 15-20 minutes, or until the squash is tender.

            Add Tortellini and Spinach: Once the squash is soft, add the cheese tortellini and fresh spinach/kale to the pot. Cook according to the tortellini package instructions (usually about 3-5 minutes) until the tortellini is tender and cooked through.

              Finish the Soup: Return the cooked sausage to the pot and stir to combine. Taste the soup and adjust seasoning if necessary.
