1 cup Arborio rice

500g fresh mushrooms (cremini or button), sliced

2 cups fresh spinach, roughly chopped

1 small yellow onion, finely chopped

3 cloves garlic, minced

4 cups vegetable or chicken broth (warmed)

1 cup dry white wine (optional)

1 cup grated Parmesan cheese

2 tablespoons olive oil

2 tablespoons butter

Salt and pepper to taste

Fresh parsley, chopped for garnish (optional)

Instructions
 

Sauté the Aromatics: In a large, heavy-bottomed pot, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onions and garlic, cooking until the onions are translucent, about 2-3 minutes.

    Cook the Mushrooms: Add the sliced mushrooms to the pot and season with a pinch of salt and pepper. Sauté for about 5-7 minutes, or until the mushrooms are tender and start to release their juices.

      Toast the Rice: Stir in the Arborio rice and cook for about 1-2 minutes, allowing the rice to absorb the flavors and become slightly translucent around the edges.

        Deglaze with Wine: If using white wine, pour it into the pot and stir continuously until most of the wine has evaporated, leaving a rich flavor behind.

          Add Broth Gradually: Begin adding the warmed broth, one ladle at a time, stirring continuously. Allow the rice to absorb the liquid before adding the next ladle of broth. This process should take about 18-20 minutes. Keep stirring until the risotto is creamy and the rice is al dente.

            Incorporate Spinach and Cheese: Once the rice is cooked to your liking, stir in the chopped spinach and let it wilt into the risotto. Then, add the grated Parmesan cheese and the remaining tablespoon of butter, stirring until melted and creamy. Adjust seasoning with salt and pepper as needed.
