1 cup grated zucchini (about 1 medium zucchini, moisture squeezed out)

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup rolled oats

1/2 cup chopped nuts (walnuts or pecans)

1/2 cup chocolate chips (optional)

Instructions
 

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare the zucchini: Grate the zucchini and remove excess moisture by squeezing it in a clean kitchen towel or paper towel. Set aside.

      Cream the butters and sugars: In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).

        Add wet ingredients: Mix in the egg and vanilla extract until well combined.

          Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.

            Mix wet and dry: Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.

              Fold in zucchini and extras: Gently fold in the grated zucchini, rolled oats, nuts, and chocolate chips (if using) until evenly distributed.

                Scoop the dough: Using a cookie scoop or tablespoon, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

                  Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the edges are golden and the centers are set. Keep an eye on them to prevent overbaking.

                    Cool: Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
