Cranberry Apple Turkey Meatballs

1 lb ground turkey

1 cup fresh cranberries, chopped (or 1/2 cup dried cranberries)

1 medium apple, peeled and finely diced

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup finely chopped onion

2 cloves garlic, minced

1 large egg

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper to taste

1/4 cup fresh parsley, chopped (for garnish)

1/4 cup chicken broth (or vegetable broth)

1 tbsp olive oil (for frying)

Instructions
 

Preheat Oven: Begin by preheating your oven to 375°F (190°C).

    Mix the Ingredients: In a large mixing bowl, combine the ground turkey, chopped cranberries, diced apple, breadcrumbs, onion, garlic, egg, thyme, rosemary, salt, and pepper. Use your hands to mix until all ingredients are well incorporated.

      Shape the Meatballs: With your hands, form the mixture into meatballs about 1½ inches in diameter. You should get around 20 meatballs.

        Sear the Meatballs: In a large skillet over medium heat, add the olive oil. Once hot, place the meatballs in the skillet, leaving space between each. Sear for about 3-4 minutes until browned on all sides.

          Transfer to Baking Dish: Once browned, carefully transfer the meatballs to a baking dish.

            Prepare Sauce: In the same skillet, pour in the chicken broth, scraping up any browned bits from the bottom. Bring it to a simmer, then pour the broth over the meatballs in the baking dish.

              Bake: Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the meatballs are cooked through (internal temperature should reach 165°F).

                Garnish and Serve: Once cooked, garnish the meatballs with fresh parsley. Serve warm as an appetizer or over a bed of couscous or mashed potatoes for a delightful meal.
