Cream Cheese Crack Chicken Chili

2 lbs boneless, skinless chicken breasts

2 (8 oz) packages cream cheese, softened

1 packet ranch seasoning mix

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 cup chicken broth

1 cup shredded cheddar cheese

1 small onion, diced

3 cloves garlic, minced

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

Optional: sliced green onions and crispy bacon bits for topping

Instructions
 

Cook the Chicken: In a large slow cooker, place the chicken breasts. Add the diced onion, minced garlic, ranch seasoning mix, cumin, chili powder, salt, and pepper. Pour in the chicken broth.

    Slow Cook: Cover and cook on low for 6-8 hours, or on high for 4 hours, until the chicken is fully cooked and tender.

      Shred the Chicken: Once the chicken is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded chicken back to the slow cooker.

        Add Cream Cheese: Cube the softened cream cheese and add it to the slow cooker. Stir well to combine and let it melt into the mixture for about 15-20 minutes.

          Mix in Beans and Corn: Stir in the black beans, corn, and diced tomatoes. Let everything cook together for another 10-15 minutes until heated through.

            Finish with Cheese: Just before serving, stir in the shredded cheddar cheese until melted. Adjust the seasoning with additional salt and pepper if necessary.

              Serve: Ladle the chili into bowls and top with green onions and crispy bacon bits if desired. Enjoy with crusty bread or tortilla chips for dipping!
