Ingredients

8 ounces of pasta (such as fusilli or penne)

2 ripe avocados

1/2 cup Greek yogurt (or any plant-based yogurt for a vegan option)

2 tablespoons fresh lemon juice

1 teaspoon garlic powder

1 teaspoon salt (to taste)

1/2 teaspoon black pepper

1 cup cherry tomatoes, halved

1/2 cup diced cucumber

1/4 cup red onion, finely chopped

1/4 cup fresh basil leaves, chopped

Optional: 1/4 cup crumbled feta cheese (for a non-vegan option)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Make the Dressing: In a blender or food processor, combine the ripe avocados, Greek yogurt, lemon juice, garlic powder, salt, and black pepper. Blend until smooth and creamy, scraping down the sides as needed. Taste and adjust seasoning if desired.

Combine Ingredients: In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, diced cucumber, chopped red onion, and basil leaves.

Mix in the Dressing: Pour the creamy avocado dressing over the pasta and gently toss until everything is well coated. If using, fold in the crumbled feta cheese for an additional burst of flavor.

Chill and Serve: Allow the salad to sit in the refrigerator for at least 30 minutes to let the flavors meld together. Serve cold as a refreshing light meal or side dish.
