Creamy Beef Shells Casserole

12 oz jumbo pasta shells

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 tsp Italian seasoning

1 tsp salt

1/2 tsp black pepper

1 cup ricotta cheese

1 cup sour cream

2 cups shredded mozzarella cheese, divided

1 cup marinara sauce

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Cook the jumbo shells according to package instructions until al dente, about 9-11 minutes. Drain and set aside.

      Prepare the Beef Mixture: In a large skillet over medium heat, sauté the diced onion and minced garlic until fragrant and translucent, about 3-5 minutes. Add the ground beef, Italian seasoning, salt, and pepper. Cook, breaking up the meat with a spatula until browned and fully cooked. Drain any excess fat.

        Mix the Cheese Filling: In a large bowl, combine the ricotta cheese, sour cream, and half of the shredded mozzarella. Stir until well mixed.

          Assemble the Casserole: Spread 1/2 cup of marinara sauce at the bottom of a 9x13 inch baking dish. Fill each cooked shell with a generous spoonful of the beef mixture, followed by a spoonful of the cheese mixture. Place each stuffed shell, open side up, in the baking dish.

            Top with Sauce and Cheese: Once all the shells are placed in the dish, pour the remaining marinara sauce over the top and sprinkle with the remaining shredded mozzarella cheese.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
