1 large head of cauliflower, cut into florets

1 cup sharp cheddar cheese, grated

1/2 cup milk (or unsweetened almond milk)

3 tablespoons unsalted butter

1 clove garlic, minced

Salt and pepper to taste

1/4 teaspoon nutmeg (optional)

Chopped chives for garnish (optional)

Prepare the Cauliflower: Place the cauliflower florets in a large pot and cover with water. Bring to a boil over medium-high heat, then reduce to a simmer and cook for 10-12 minutes, or until the cauliflower is tender when pierced with a fork.
