Creamy Cheesy Cauliflower Rice

Ingredients
  

1 medium head of cauliflower, riced (about 4 cups)

1 tablespoon olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1/2 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/4 cup chopped fresh parsley, for garnish

Optional: 1/4 cup grated Parmesan cheese for an extra cheesy kick

Instructions
 

Prep the Cauliflower: Start by removing the leaves and stem from the cauliflower. Cut into florets and pulse in a food processor until it resembles rice. If you don’t have a food processor, you can use a box grater.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

      Cook the Cauliflower Rice: Add the riced cauliflower to the skillet. Stir well to combine with the onion and garlic. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.

        Make it Creamy: Reduce the heat to low. Pour in the heavy cream, then add the cream cheese and stir until melted and well combined.

          Add the Cheeses: Slowly add the shredded cheddar, continuing to stir until the cheese is fully melted and creamy. If using, sprinkle in the grated Parmesan cheese for extra flavor.

            Season: Stir in the garlic powder, onion powder, smoked paprika, and season with salt and pepper to taste. Mix until everything is well incorporated and creamy.

              Serve: Remove from heat and garnish with freshly chopped parsley. Serve immediately as a side dish or as a base for your favorite protein.
