1 lb (450g) boneless, skinless chicken thighs or breasts, diced

1 medium onion, finely chopped

2 cloves garlic, minced

3 cups (720ml) low-sodium chicken broth

2 cups (300g) frozen or fresh sweet corn kernels

1 medium potato, peeled and diced

1 cup (240ml) heavy cream

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken: In a large pot, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes until browned on all sides. Remove the chicken from the pot and set aside.

    Cook the Aromatics: In the same pot, add the onion and garlic. Sauté for 3-4 minutes until the onions are translucent and fragrant.

      Build the Base: Stir in the diced potato, corn, dried thyme, and paprika. Pour in the chicken broth and bring the mixture to a boil.

        Simmer: Reduce the heat to low and return the cooked chicken to the pot. Cover and simmer for about 15-20 minutes, or until the potatoes are tender.

          Add Cream: Stir in the heavy cream and cook for an additional 5 minutes. Taste and adjust seasoning with more salt and pepper if needed.
