Creamy Chicken and Spinach One-Pot Pasta

1 lb (450g) boneless, skinless chicken breasts, diced

8 oz (225g) penne pasta

4 cups (950ml) chicken broth

1 cup (240ml) heavy cream

3 cups fresh spinach, roughly chopped

1 medium onion, diced

3 cloves garlic, minced

1 cup grated Parmesan cheese

2 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper, to taste

Optional: crushed red pepper flakes, for a kick

Instructions
 

Sauté the Chicken: In a large pot or skillet, heat the olive oil over medium-high heat. Add the diced chicken breasts, season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes or until the chicken is browned and cooked through. Remove the chicken from the pot and set aside.

    Cook the Aromatics: In the same pot, add the diced onion and sauté for about 3-4 minutes, or until translucent. Stir in the minced garlic and cook for an additional minute, being careful not to let it burn.

      Add the Pasta and Broth: Return the cooked chicken to the pot. Add the penne pasta and chicken broth. Stir well to combine, making sure the pasta is submerged in the liquid.

        Simmer: Bring the mixture to a boil, then reduce to a simmer. Cover the pot and let it cook for 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed.

          Incorporate Cream and Spinach: Reduce the heat to low and add the heavy cream and chopped spinach to the pot. Stir until the spinach has wilted, and the sauce is creamy. If the sauce is too thick, add a little more broth or water until you reach the desired consistency.

            Finish with Cheese: Remove the pot from heat and stir in the grated Parmesan cheese. Adjust seasoning with additional salt, pepper, or red pepper flakes if desired.

              Serve: Serve hot, garnished with extra Parmesan and a sprinkle of fresh black pepper if you like.
