Ingredients

8 oz (about 2 cups) penne pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

4 cups fresh baby spinach

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

½ teaspoon red pepper flakes (optional)

Fresh basil leaves, for garnish (optional)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to the package instructions until al dente. Drain and set aside.

Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Add the bite-sized chicken pieces, season with salt, pepper, and Italian seasoning. Cook until the chicken is browned and cooked through, about 6-8 minutes. Make sure to stir occasionally to ensure even cooking.

Add the Garlic: Once the chicken is cooked, add the minced garlic to the skillet. Sauté for an additional 1-2 minutes until fragrant, being careful not to burn the garlic.

Incorporate Spinach: Add the fresh baby spinach to the skillet, stirring gently until it wilts, about 2-3 minutes.

Create the Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer, and let it cook for an additional 3-5 minutes until slightly thickened.

Add the Cheese: Stir in the grated Parmesan cheese, mixing until it melts into the sauce. If desired, add red pepper flakes for a little heat and adjust the seasoning with salt and pepper if necessary.

Combine with Pasta: Add the cooked pasta to the skillet, tossing everything together until the pasta is well-coated with the creamy sauce.

Serve: Remove from heat. Garnish with fresh basil leaves, extra Parmesan, and a sprinkle of red pepper flakes if desired. Serve hot.
