Creamy Chickpea Spinach Stew

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon turmeric

1/4 teaspoon red pepper flakes (optional)

1 can (15 oz) chickpeas, drained and rinsed

4 cups fresh spinach (or 1 cup frozen spinach)

1 can (14 oz) coconut milk

2 cups vegetable broth

Salt and pepper to taste

Juice of 1 lemon

Fresh cilantro, chopped (for garnish)

Instructions
 

Heat the Oil: In a large pot, heat the olive oil over medium heat.

    Sauté Aromatics: Add the chopped onion and sauté for about 5-7 minutes, until it becomes translucent. Stir in the minced garlic, cumin, smoked paprika, turmeric, and red pepper flakes (if using), and cook for an additional 1-2 minutes until fragrant.

      Add Chickpeas: Stir in the drained chickpeas, ensuring they are well-coated with the spices. Sauté for another 3-4 minutes.

        Pour in Liquids: Add the coconut milk and vegetable broth to the pot. Stir well and bring the mixture to a gentle simmer.

          Simmer Stew: Allow the stew to simmer for about 10-15 minutes, letting the flavors meld together. Stir occasionally to prevent sticking.

            Incorporate Spinach: Once the stew has thickened slightly, add the fresh spinach to the pot. If you're using frozen spinach, add it at this stage as well. Stir until the spinach wilts down (about 3-4 minutes).
