Creamy Mushroom and Asparagus Chicken Penne

12 oz penne pasta

2 cups fresh asparagus, trimmed and cut into 2-inch pieces

1 lb chicken breast, diced into bite-sized pieces

8 oz cremini mushrooms, sliced

1 small onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese (plus extra for serving)

2 tbsp olive oil

1 tsp dried thyme (or 1 tbsp fresh thyme)

Salt and pepper, to taste

Fresh parsley, chopped for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the penne according to package instructions until al dente. During the last 3 minutes of cooking, add the asparagus. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the diced chicken with salt and pepper. Add the chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and cook until translucent, about 3-4 minutes. Add the garlic and sliced mushrooms, cooking until the mushrooms are softened, about 5 minutes.

        Make the Sauce: Pour in the chicken broth, scraping the bottom of the pan to release any flavorful bits. Add the heavy cream and dried thyme, stirring to combine. Bring the sauce to a simmer and cook for about 3-5 minutes, allowing it to thicken slightly.

          Combine Everything: Reduce the heat to low, and return the cooked chicken to the skillet. Add the drained penne and asparagus to the sauce, tossing to coat everything evenly. Stir in the Parmesan cheese, letting it melt into the sauce. Season with additional salt and pepper to taste.
