12 oz (340g) pasta of your choice (fettuccine or penne works well)

2 large red bell peppers, roasted and peeled

1 cup heavy cream

3 cloves garlic, minced

1 small onion, finely chopped

1/2 cup grated Parmesan cheese

2 tbsp olive oil

1 tsp dried oregano

1/2 tsp red pepper flakes (optional, for heat)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Roasting the Peppers: Preheat your oven to 450°F (232°C). Cut the red bell peppers in half, remove the seeds and stems, then place them cut side down on a baking sheet. Roast them in the oven for 20-25 minutes or until the skins are blistered and charred. Remove and let cool slightly, then peel off the skins, chop the peppers, and set aside.

    Cooking the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta.

      Making the Sauce: In a large skillet over medium heat, add the olive oil. Once heated, sauté the chopped onion until translucent (about 3-4 minutes). Add minced garlic and cook for an additional 1-2 minutes until fragrant.

        Blending the Sauce: Transfer the roasted red peppers into a blender along with the heavy cream, dried oregano, and red pepper flakes. Blend until smooth and creamy.
