8 oz (about 225g) pasta (penne or fusilli work well)

2 tablespoons olive oil

1 pound (450g) Italian sausage (mild or spicy, casings removed)

1 medium onion, thinly sliced

1 bell pepper (red or yellow), sliced

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon crushed red pepper flakes (optional)

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Sauté the Sausage: In a large skillet or pan over medium heat, add the olive oil. Once hot, add the Italian sausage. Use a wooden spoon to break it apart while cooking. Stir occasionally until it's browned and cooked through, about 5-7 minutes.

      Add Vegetables: To the skillet with the sausage, add the sliced onion and bell pepper. Sauté for another 3-4 minutes until the vegetables are tender.

        Mix in Garlic & Spices: Add the minced garlic, dried oregano, and crushed red pepper flakes (if using). Cook for an additional 1-2 minutes until fragrant.

          Incorporate Tomatoes and Cream: Stir in the halved cherry tomatoes. Cook for about 2 minutes to allow them to soften. Pour in the heavy cream, mixing until everything is well combined.

            Combine Pasta and Cheese: Reduce the heat and mix in the drained pasta. If the sauce seems too thick, gradually add some reserved pasta water until you reach desired creaminess. Stir in the grated Parmesan cheese and season with salt and pepper to taste.

              Garnish and Serve: Remove from heat, and if desired, garnish with fresh basil before serving.
