Ingredients

12 oz pasta (fettuccine, penne, or your choice)

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and roughly chopped

2 tbsp olive oil

2 cloves garlic, minced

1 cup heavy cream

1/2 cup cream cheese, softened

1/2 cup grated Parmesan cheese

1 tsp lemon juice

Salt and pepper to taste

Red pepper flakes (optional, for heat)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta:

In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

      Sauté the Vegetables:

In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and artichoke hearts, cooking for another 2-3 minutes until the spinach is wilted.

          Prepare the Cream Sauce:

Lower the heat and pour in the heavy cream, stirring to combine. Add the softened cream cheese, and mix until the cream cheese is fully melted and incorporated into the sauce. If the mixture is too thick, add some reserved pasta water until you reach your desired consistency.

              Add Cheese and Seasoning:

Stir in the grated Parmesan cheese until melted and smooth. Add lemon juice, salt, pepper, and red pepper flakes if using. Adjust seasoning to taste.

                  Combine Pasta with Sauce:

Add the drained pasta to the skillet, tossing gently to coat the pasta in the creamy sauce. If needed, add more reserved pasta water to help the sauce cling to the pasta.

                      Serve and Garnish:

Plate the creamy spinach artichoke pasta and garnish with fresh parsley. Serve immediately while hot and enjoy a delightful, creamy meal!
