Ingredients

4 (6 oz) salmon fillets, skinless

1 cup fresh spinach, chopped

1 cup cream cheese, softened

1/2 cup grated parmesan cheese

1/4 cup finely chopped green onions

2 cloves garlic, minced

1 tsp lemon juice

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

2 tbsp olive oil

Lemon wedges, for serving

Fresh parsley, for garnish

Instructions

Prepare the Filling:

    - In a mixing bowl, combine the softened cream cheese, chopped spinach, grated parmesan cheese, green onions, minced garlic, lemon juice, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are well incorporated and form a creamy filling.

      Prepare the Salmon Fillets:

        - Lay the salmon fillets on a cutting board, skin side down. Gently slice each fillet horizontally to create a pocket for the filling, being careful not to cut all the way through.

          Stuff the Salmon:

            - Generously spoon the creamy spinach filling into each pocket of the salmon fillets, pressing it down gently.

              Heat the Skillet:

                - In a large skillet, heat the olive oil over medium heat. Once the oil is hot, carefully place the stuffed salmon fillets seam side down in the skillet.

                  Sear the Salmon:

                    - Cook the salmon for about 5 minutes without moving them, allowing a nice golden crust to form. Then, flip the fillets gently and cook for another 4-5 minutes or until the salmon is cooked through and flakes easily with a fork.

                      Serving:

                        - Carefully transfer the stuffed salmon to a plate. Serve immediately with lemon wedges and a sprinkle of fresh parsley for garnish.

                          Enjoy:

                            - Pair with your favorite sides like roasted vegetables or a fresh salad for a complete meal.
