Creamy Tomato Avocado Pasta

8 oz (225g) spaghetti or pasta of choice

2 ripe avocados, halved and pitted

2 cups cherry tomatoes, halved

3 cloves garlic, minced

1/2 cup fresh basil leaves, plus extra for garnish

1/2 cup heavy cream (or coconut cream for a vegan option)

1/4 cup olive oil

Juice of 1 lemon

Salt and pepper to taste

Red pepper flakes (optional, for a little heat)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain and set aside.

    Prepare the Sauce: In a food processor, combine avocados, cherry tomatoes, garlic, basil, heavy cream, olive oil, lemon juice, salt, and pepper. Blend until smooth and creamy. If desired, add red pepper flakes for a spicy kick.

      Combine: In the same pot used for pasta, toss the drained spaghetti with the creamy avocado-tomato sauce. If the sauce is too thick, gradually mix in reserved pasta water until desired consistency is achieved.
