Ingredients

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 carrot, finely chopped

1 celery stalk, finely chopped

1 can (15 oz) crushed tomatoes

4 cups vegetable broth

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional)

1 cup heavy cream or coconut cream for a dairy-free option

1 package (16 oz) gnocchi (store-bought or homemade)

2 cups fresh spinach or kale

Salt and pepper to taste

Grated Parmesan cheese for serving (optional)

Fresh basil for garnish

Instructions

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic, chopped carrot, and celery, then cook for another 5 minutes, stirring occasionally.

Add Tomatoes and Broth: Pour in the crushed tomatoes and vegetable broth. Add the dried basil, oregano, and red pepper flakes (if using). Stir well to combine all the ingredients.

Simmer: Bring the soup to a gentle simmer. Allow it to cook for about 10 minutes, stirring occasionally to let the flavors meld.

Incorporate Cream: Lower the heat, and slowly stir in the heavy cream (or coconut cream). Let it heat through, but do not let it boil.

Cook Gnocchi: Add the gnocchi to the pot. Cook according to the package instructions, usually around 2-4 minutes, or until they float to the top.

Add Greens: Once the gnocchi is cooked, stir in the fresh spinach or kale. Allow to wilt for about 1-2 minutes. Season with salt and pepper to taste.

Serve: Ladle the soup into bowls. Top with grated Parmesan cheese and garnish with fresh basil if desired. Enjoy the comforting and creamy goodness!
