2 cans (15 oz each) cannellini beans, drained and rinsed

4 cups vegetable broth

1 cup heavy cream or coconut cream for a dairy-free option

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup diced carrots

2 cups fresh spinach, roughly chopped

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon red pepper flakes (adjust to taste)

2 tablespoons olive oil

Salt and pepper, to taste

Juice of 1 lemon

Fresh basil leaves, for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and diced carrots. Sauté for about 5 minutes until the onion is translucent and the carrots are tender. Stir in the minced garlic, oregano, thyme, and red pepper flakes; cook for another minute until fragrant.

    Add the Beans and Broth: Stir in the rinsed cannellini beans and vegetable broth. Bring to a simmer, allowing it to cook for about 10 minutes. This will infuse the beans with the aromatic flavors.

      Blend the Soup: Using an immersion blender, blend the soup until it is smooth and creamy. Alternatively, you can transfer about half of the soup to a traditional blender, blend until smooth, and then return it to the pot.
