2 cups (300g) mushrooms, sliced (cremini or button mushrooms)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup (240ml) vegetable broth

1 cup (240ml) coconut milk (full fat for creaminess)

2 tbsp nutritional yeast

2 tbsp olive oil

1 tsp dried thyme

1 tsp dried oregano

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Cook the Pasta: Begin by boiling a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 2-3 minutes until it becomes translucent. Then, add the minced garlic and cook for another 1-2 minutes, stirring frequently to prevent burning.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet and sauté for about 5-7 minutes until they’re golden brown and have released their moisture. Stir occasionally to ensure even cooking.
