1 lb ground beef (or ground turkey for a lighter option)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp chili powder

1 tsp cumin

1/2 tsp paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1/2 cup black beans, rinsed and drained

1/2 cup corn (frozen or canned)

8 small flour tortillas

Olive oil spray

Fresh cilantro, for garnish (optional)

Sour cream and salsa, for serving

Instructions
 

Prepare the Filling: In a large skillet over medium heat, add a splash of oil and sauté the chopped onion until translucent, about 3 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Cook the Meat: Add the ground beef or turkey to the skillet. Break it apart with a spatula and cook until browned, approximately 5-7 minutes. Drain any excess fat if necessary.

      Season: Sprinkle in the chili powder, cumin, paprika, salt, and pepper. Mix well to combine and cook for 1-2 minutes until spices are fragrant.

        Add Beans and Corn: Stir in the black beans and corn, mixing to heat through for another 2 minutes. Remove from heat and add the shredded cheese, mixing until melted.

          Assemble Taco Rolls: Lay a tortilla flat on a clean surface and spoon about 2-3 tablespoons of the meat mixture onto the center. Roll it tightly from one end to the other, tucking in the sides as you go to create a sealed roll. Repeat with the remaining tortillas and filling.

            Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.
