Crispy Bacon & Egg Breakfast Grilled Cheese

This recipe combines crispy bacon, velvety eggs, and gooey sharp cheddar cheese, all grilled to perfection between slices of sourdough bread. Ingredients
  

4 slices of sourdough bread

4 slices of sharp cheddar cheese

4 slices of crispy bacon

2 large eggs

2 tablespoons of unsalted butter, divided

Salt and pepper, to taste

Optional: hot sauce or sautéed spinach for topping

Instructions
 

Cook the Bacon: In a large skillet over medium heat, cook the bacon until it's crispy, about 5-7 minutes. Once done, remove the bacon from the skillet and let it drain on paper towels. Reserve about 1 tablespoon of the bacon grease in the skillet.

    Fry the Eggs: In the same skillet with the reserved bacon grease, crack the eggs and cook to your desired doneness (sunny-side-up or over-easy works well). Season with salt and pepper. Once cooked, set them aside.

      Assemble the Sandwich: Take two slices of sourdough bread. Place one slice in the skillet over medium heat. Layer on two slices of cheddar cheese, followed by two pieces of cooked bacon, and then top with the fried egg. Add the remaining two slices of cheddar cheese and finish with the second slice of bread.

        Grill the Sandwich: Spread 1 tablespoon of butter on the top slice of bread. Carefully flip the sandwich once the bottom slice is golden brown, about 3-4 minutes. Add the remaining tablespoon of butter on the uncooked side and grill until both sides are golden and the cheese is melted, approximately another 3-4 minutes.

          Slice and Serve: Remove from the skillet and let it rest for a minute. Slice the sandwich in half, and drizzle with hot sauce or top with sautéed spinach if desired.

            Enjoy: Serve immediately while the cheese is gooey, and the sandwich is crispy!
