Crispy Chicken Avocado Rice Wraps

Ingredients
  

2 cups cooked jasmine rice

1 lb chicken tenders

1 cup breadcrumbs (panko preferred)

2 tablespoons all-purpose flour

1 large egg, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

1 large ripe avocado, sliced

1 cup shredded lettuce (iceberg or romaine)

½ cup diced tomatoes

¼ cup chopped fresh cilantro

Juice of 1 lime

4 large rice paper wraps

Soy sauce or sweet chili sauce for dipping

Instructions
 

Prepare the Chicken:

    - Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

      - In a shallow bowl, mix the flour, garlic powder, onion powder, paprika, salt, and pepper. In another bowl, place the beaten egg, and in a third bowl, place the breadcrumbs.

        - Dredge each chicken tender in the seasoned flour, then dip it into the egg, and finally coat it with breadcrumbs, pressing gently to adhere. Place on the prepared baking sheet.

          Bake the Chicken:

            - Bake the coated chicken tenders in the preheated oven for about 20-25 minutes, or until golden brown and fully cooked (internal temperature should reach 165°F or 75°C). Allow them to cool slightly before cutting them into strips.

              Prepare the Rice Wraps:

                - While the chicken is baking, prepare your rice paper wraps. Fill a large bowl with warm water and soak each rice paper wrap for about 15-20 seconds until pliable. Carefully remove and lay them flat on a clean, damp kitchen towel.

                  Assemble the Wraps:

                    - Start by layering about ½ cup of cooked jasmine rice on the bottom half of each rice paper wrap.

                      - Top the rice with a few strips of crispy chicken, followed by slices of avocado, shredded lettuce, diced tomatoes, cilantro, and a squeeze of lime juice.

                        Rolling the Wraps:

                          - Fold the bottom of the rice paper over the filling. Then, fold in the sides and roll tightly to secure the filling, like a burrito. Repeat this process until all wraps are assembled.

                            Serve:
