1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon ground cumin

Salt and pepper, to taste

4 cups fresh spinach, washed and dried

1 cup cherry tomatoes, halved

½ small red onion, thinly sliced

1 avocado, diced

¼ cup feta cheese, crumbled (optional)

Juice of 1 lemon

2 tablespoons balsamic vinegar

Fresh herbs for garnish (e.g., parsley or cilantro)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Chickpeas: On a baking sheet, spread the drained chickpeas in a single layer. Drizzle with olive oil and sprinkle smoked paprika, garlic powder, cumin, salt, and pepper over them. Toss until evenly coated.

      Roast the Chickpeas: Bake in the preheated oven for 20-25 minutes or until chickpeas are crispy and golden, shaking the pan halfway through for even cooking.

        Assemble the Salad: In a large salad bowl, combine the fresh spinach, halved cherry tomatoes, sliced red onion, and diced avocado.

          Dress the Salad: In a small bowl, whisk together the lemon juice, balsamic vinegar, and a pinch of salt and pepper. Drizzle over the salad and toss gently to combine.

            Add Chickpeas & Cheese: Once the chickpeas are out of the oven and slightly cooled, add them to the salad. If using, sprinkle the crumbled feta cheese on top.
