Crispy Garlic Potato Skins

4 large russet potatoes

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup shredded cheddar cheese

½ cup sour cream

¼ cup chopped fresh chives (for garnish)

Optional: ½ cup cooked bacon bits

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Scrub the russet potatoes thoroughly under running water. Pat them dry and pierce each potato several times with a fork. This helps steam escape during baking.

      Bake the Potatoes: Place the potatoes on a baking sheet and bake in the preheated oven for about 45-60 minutes, or until tender when pierced with a fork. Once done, remove from the oven and let them cool for about 10 minutes.

        Make the Garlic Oil: In a small saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, or until fragrant (be careful not to burn it). Remove from heat and allow it to cool slightly.

          Scoop the Potatoes: When the potatoes are cool enough to handle, cut each potato in half lengthwise. Carefully scoop out the insides, leaving about ¼ inch of potato on the skin. (You can save the scooped-out potato for another recipe like mashed potatoes!)

            Season the Potato Skins: Brush the insides of the potato skins generously with the garlic oil, and sprinkle with garlic powder, onion powder, smoked paprika, salt, and pepper.

              Bake the Skins: Place the potato skins skin-side down back on the baking sheet and bake them in the oven for an additional 15-20 minutes, or until they're crispy and golden brown.

                Add Cheese and Optional Ingredients: Remove the crispy potato skins from the oven. If using, sprinkle the shredded cheddar cheese (and bacon bits, if desired) into each skin. Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

                  Serve: Remove the potato skins from the oven, let them cool for a couple of minutes, then garnish with sour cream and sprinkle with fresh chives. Serve warm and enjoy your crispy garlic potato skins!
