4 large russet potatoes, washed and scrubbed

1/4 cup olive oil

1 tablespoon garlic powder

2 teaspoons smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Optional: 1/4 teaspoon red pepper flakes (for a spicy kick)

Preheat the Oven: Set your oven to 425°F (220°C) and let it preheat while you prepare the potatoes.

    Prepare the Potatoes: Cut the washed potatoes into wedges (approximately 8 wedges per potato). Ensure they are uniform in size for even cooking.

      Seasoning Mix: In a large bowl, combine the olive oil, garlic powder, smoked paprika, oregano, thyme, salt, black pepper, and red pepper flakes (if using). Mix well to form a marinade.

        Toss the Wedges: Add the potato wedges to the bowl of seasoning mix. Toss well to ensure all wedges are evenly coated with the marinade.

          Arrange in Skillet: Heat a large, oven-safe skillet (cast iron works great) over medium-high heat. Once hot, arrange the seasoned potato wedges in a single layer, making sure they aren't overcrowded. Cook for about 5 minutes, allowing them to begin crisping up at the bottom.
