Crispy Panko Baked Cod with Herb Sauce

For the Cod:

4 (6 oz) cod fillets, skinless and boneless

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1/2 tsp garlic powder

1/2 tsp paprika

Salt and pepper, to taste

2 tbsp olive oil

For the Herb Sauce:

1/2 cup Greek yogurt

2 tbsp mayonnaise

1 tbsp Dijon mustard

1 tbsp fresh lemon juice

1 clove garlic, minced

1/4 cup fresh parsley, finely chopped

2 tbsp fresh dill, finely chopped

Salt and pepper, to taste

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Cod Fillets: Pat the cod fillets dry with paper towels and season both sides with salt and pepper.

      Set Up Breading Station: In three separate shallow dishes, place the flour mixed with garlic powder and paprika in the first, the beaten eggs in the second, and the panko breadcrumbs in the third.

        Coat the Cod: Dredge each cod fillet in the flour mixture, shaking off the excess. Next, dip it into the beaten eggs, letting any excess drip off, and finally coat it with panko breadcrumbs. Press the breadcrumbs onto the fillet to ensure a good coverage.

          Arrange on Baking Sheet: Place the coated cod fillets on the prepared baking sheet. Drizzle the olive oil evenly over the fillets for extra crispiness.

            Bake: Bake in the preheated oven for about 15-18 minutes or until the cod is cooked through and the panko is golden brown and crispy.

              Make the Herb Sauce: While the cod is baking, prepare the herb sauce. In a medium bowl, combine Greek yogurt, mayonnaise, Dijon mustard, lemon juice, minced garlic, parsley, and dill. Mix well until smooth and season with salt and pepper to taste.
