4 medium Yukon Gold potatoes, thinly sliced

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup grated Parmesan cheese

1 cup shredded cheddar cheese

1 cup black beans, rinsed and drained

1 jalapeño, sliced (seeds removed for less heat)

1 ripe avocado, diced

1/2 cup sour cream

Fresh cilantro, chopped (for garnish)

1 lime, cut into wedges

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: In a large bowl, toss the thinly sliced Yukon Gold potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
