Ingredients

14 oz firm tofu, drained and pressed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper, to taste

1 bell pepper (any color), sliced

1 medium onion, sliced

Juice of 1 lime

4 large tortillas (flour or corn)

1 avocado, sliced

Fresh cilantro, chopped for garnish

Salsa or hot sauce (optional, for serving)

Instructions

Prepare the Tofu: Begin by pressing the tofu to remove excess moisture for at least 15 minutes. Once pressed, cut it into bite-sized cubes.

Marinate the Tofu: In a mixing bowl, combine olive oil, smoked paprika, cumin, garlic powder, onion powder, cayenne pepper, salt, and pepper. Add the tofu cubes and gently toss until well-coated. Let it marinate for at least 15 minutes.

Cook the Tofu: Heat a non-stick skillet over medium-high heat. Once hot, add the marinated tofu and cook until golden and crispy on all sides, about 10-15 minutes. Use a spatula to turn the tofu cubes occasionally for even cooking.

Sauté the Vegetables: In the same skillet, add a little more oil if needed and toss in the sliced bell pepper and onion. Sauté for about 5-7 minutes until the vegetables are tender and slightly charred. Squeeze lime juice over the veggies and mix.

Assemble the Wraps: Warm the tortillas in a dry skillet for a few seconds on each side, or microwave them for about 20 seconds. Layer the crispy tofu, sautéed peppers, and onion in the center of each tortilla. Top with avocado slices and a sprinkle of fresh cilantro.

Roll and Serve: Roll the tortillas tightly, folding in the edges as you go to create a wrap. Serve immediately with salsa or hot sauce on the side, if desired.
