Ingredients

4 boneless, skinless chicken breasts

2 large apples, cored and sliced (preferably Granny Smith or Honeycrisp)

1 large onion, diced

3 cloves garlic, minced

1 cup low-sodium chicken broth

1 teaspoon dried sage

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil

1 tablespoon maple syrup (optional for sweetness)

Fresh sage leaves for garnish

Instructions

Prepare the Chicken: Season the chicken breasts with salt, pepper, dried sage, and dried thyme. Rub the spices into the chicken to ensure even coverage.

Sauté Onion and Garlic: In a skillet over medium heat, add olive oil. Once hot, add the diced onion and sauté for about 4-5 minutes until translucent. Add the minced garlic and cook for an additional minute, until fragrant.

Layer Ingredients in Crockpot: In the bottom of the crockpot, place the sautéed onion and garlic. Arrange the seasoned chicken breasts on top.

Add Apples and Broth: Layer the apple slices over the chicken, making sure to distribute them evenly. Pour the chicken broth over the entire mixture. If you’d like a touch of sweetness, drizzle the maple syrup on top.

Cook: Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.

Finish and Serve: Once cooked, remove the chicken from the crockpot and let it rest for a few minutes. Stir the apple and onion mixture in the crockpot to combine. Serve the chicken sliced, topped with the apple mixture, and garnish with fresh sage leaves.

Enjoy: This dish pairs wonderfully with mashed potatoes or a side of roasted vegetables!
